The Spanish cooperage, Tonelería Quercus, announced that through its “Barrels of Origin, Spanish Oak” project, the company will market the first wine casks made from oak produced in Spain, more specifically, from the sessile oak and white oak found in the Saja Nature Reserve in Cantabria, a region in northern Spain.
According to Toneleria Quercus, the purpose of the project is to “give added value to our forests and wines whose appellations and personalities are highly regarded.” The company compared wines aged in Spanish oak (Quercus albar and Quercus pyrenaica) to those aged in American and French oak, and found that the Spanish oak is perfectly effective in aging quality wines.
The Spanish National Institute for Agrarian and Food Research and Technology (INIA), has for the last 15 years studied the properties of Spanish oak in the aging of wine, and recently found that wines from different denominations of origin have confirmed the oenological potential of Spanish oak in barrel-making versus the use of traditional wood, like American and French oak.
