 Comments:

The gourmet product market in the USA is growing; between 2001 and 2005, sales went up by more than 55%, i.e., an increase of 15 billion dollars. Moreover, it is a very dynamic market that has grown at an average rate of 8.9% in the last five years and on which more than 1,000 new products are launched every year, while the food market in general has grown at a rate of slightly less than 4%.

It is estimated that the sale of gourmet food and beverages totalled 41.2 billion dollars in 2004, increasing by 9.8% in comparison with sales of the previous year, when they totalled 34.473 billion dollars. If the market continues the upward trend it has been showing since the year 2000, the forecast for 2009 is for the retail sale of gourmet products to exceed 60 billion dollars.

The most important geographic markets for gourmet products in the United States are the West Coast and North-East of the USA. In these regions, the inhabitants have a greater per capita income, are more concerned about what they eat, they eat out more often and are more willing to try new recipes and products.

American consumers are more and more willing to pay a higher price for products that meet their needs and are in line with their lifestyle. The increase in their purchasing power, their concern about a healthier diet and consumption of quality foodstuffs are some of the factors that increase the demand for these products.
